Anche a me/anch'io e Non vedo l'ora. Anch'io, non vedi l'ora di andare in vacanza? è corretto?

I have 20 days until my vacation. Me too and I can not wait until I go on vacation.

- Anche alle mie. Non vedo l'ora di andare in vacanza.

Note:

I used "Anche alle mie", because of "Mancano 20 giorni" [ Subject "20 giorni" ], which is a rather different form compared to "I have 20 days" [ Subject " I " ].

But what if I want to say, "me also" as to just agree with another person, could I say, anche io or anch'io?

You could say "Anche a me", but it isn't grammatically correct, in this particular sentence... I don't recommend using it, unless you are talking with your close friends or family members.
A less common but correct expression is "(Vale) anche per me", "Per me (vale) lo stesso" or "Lo stesso (vale) per me". They all mean "The same goes for me".

"Anche io / Anch'io" can be used when the subject of the sentence you are referring to is " Io " (implied or not).
A similar rule is valid for "Anche a me", but referring to "Complemento di Termine" [ an indirect complement ] and not the subject.
As a more practical rule, you can use such expressions if they can be "completed" adding the missing part of the sentence you are referring to.

i.e. 1:

~A: "(Io) sono stanco" [ "I'm tired" ]
~B: "Anch'io"

The subject is "Io" and ~B can be written as:
"Anch'io sono stanco".

i.e. 2:

~A: "Mi manca" = "A me manca" [ "I miss him/her" ]
~B: "Anche a me"

"Mi" = "A me" is a "Complemento di Termine" and ~B can be written as:
"Anche a me manca".
