If “caffè” is masculine then, why is it quel caffè instead of quello caffè. Esercizio, regione, sciatore, and pianist are masc. or fem?

"Quello" [ in all of its forms ] is a compound adjective [ "Que" + article ], so it follows the same rules of articles.

1. Words beginning with "normal" consonant

"Quello" is used like the article "il"
e.g.:
"Gatto" [ Male cat ]
"Il gatto" [ Singular ]
"Quel gatto" [ Singular ]
"I gatti" [ Singular ]

2. Words beginning with "Z" OR "S"+consonant OR "PS" OR "PN"

Depending on the word, it's better "Quegli" or " Quegl' ".

I DON'T recommend using " Quegl' "... Ever...
It's a form closer to some northern dialects and it's by no means standard italian...
